The basics: saltwater concentration matters most
The single most important factor in desanding is the concentration of your saltwater. Aim for about 30g of salt per liter of water, roughly a 3% concentration - close to the salinity of seawater itself. Clams will not release sand in plain fresh water, so salt is essential. Fill a flat tray with just enough water to submerge the clams, and lay them out so they do not overlap.
Why keep them in the dark
Clams release sand more actively in dark conditions. Cover the tray with newspaper or foil to block light, and leave it at room temperature for two to three hours. Refrigerating them slows their activity and stalls the desanding process, so room temperature is the way to go.

Storage and freezing tips
Cooking the clams the same day is ideal. If you cannot use them right away, freezing after desanding works well. Drain them, lay them flat in a zip bag, press out the air, and freeze. Freezing is even said to firm up the meat and deepen the flavor. You can cook them straight from frozen, no thawing needed - drop them directly into miso soup or sake-steamed dishes.
For short-term refrigeration, rinse the desanded clams lightly, wrap them in damp newspaper, and refrigerate. Eat them within one to two days.
